I haven't smoked one yet. I froze all but one, and the one I cooked I just


slit in easier to cook portions on the grill. I'm using the meet to eat with eggs, make tortilla pizzas, sandwiches, etc. for quick meals. Today I have a pork butt going and some chicken thighs in the extra space to take advantage of it.

I'm changing it up on the smoking - I have the vent at the top wide open, and pulling out the chip tray completely for a great flow (I have an electric smoker). It's sure burning up the chips, but the smoke is super thick and fresh. I'm going to hit it hard with that for two hours, then settle in for the cook.
